Not every recipe calls for a big hazelnut. Piccola is our small grade: round Giresun kernels sorted to 8–9 mm, sized for one neat bite. It is the same nut from the same orchards as our 13–15 mm double roasted kernels, only smaller, and that helps in the pan: a small kernel takes up heat more evenly, so the batch roasts more uniformly. The 250 g vacuum pack is an easy way to try them, for snacking or for baking with whole kernels.

Stir them whole into brownies, cookies, cakes and chocolate recipes: no chopping needed, and they scatter evenly through the mixture. They keep their shape in a homemade chocolate bar or a tahini and molasses mix, and a spoonful suits breakfast yoghurt or granola.

After opening, move the kernels to a jar that closes tightly and keep it somewhere cool, dark and dry. If you only reach for piccola now and then, the fridge is a better home for the jar.
